Grilled Tandoori Chicken

Plays: 49650

In this video, Chef John shows you how to make an easy version of an Indian classic, tandoori chicken. The secret is a pre-made tandoori masala spice mix. Then it’s just marinating chicken thighs in yogurt, lime juice, and the spice mix. Since there’s no oil in the marinade, Chef John shows you how to prevent the chicken from sticking to your hot, hot grill. Easy and maybe a little exotic, this chicken is delicious served with grilled scallions and a bright splash of lime juice. This grilled chicken dish requires only four ingredients. To make original mix, you can actually just mix cumin, crushed coriander, paprika, and crushed chili!

this recipe is even more authentic if you put it in the oven at 450 to 500F. If you absolutely must have grill marks (which Tandoori Chicken does not as it is usually cooked in a clay oven -Tandoor) put your chicken in the oven on a cast iron skillet with ribs. Traditionally this is made with the bone in but skin off. Shallow cuts on thee surface help cook it evenly. PS I would also add pureed garlic to the marinade and extra salt+cayenne pepper to taste.
