Cutting Chicken with Shears

Plays: 1639

It’s always less expensive to buy a whole chicken than chicken parts at the grocery store. In this video, you’ll learn how to save money by cutting whole chickens into individual pieces. And you don’t need a super-sharp boning knife to get the job done. You can use everyday kitchen shears. Just remember to “snip it where it bends!” Chef John will show you how to scissor your way through the skin and meat, then when you see the ball joint, simply snip through it with the scissors. Shears work fine here because you’re not really cutting through bone for the most part. You’ll only need a heavy knife for splitting the breast bone. It’s a simple technique.

No wonder why my kitchen scissors always need sharpening...I'm cutting through too many bones! I'll have to remember to doing it the way Chef John just did it!
