How to Make San Francisco Sourdough Starter

Plays: 14064

In this six-part series called “Follow the Sourdough,” Chef John shows you how to make sourdough bread, from beginning to end. And where do you start? With the starter, of course. Yes, today it’s step one: making the sourdough starter. It’s actually a super-simple combination of warm water whisked into bread flour. That’s it! The idea here is that you’re making yeast bread without actually adding any yeast—instead you’re taking advantage of the wild yeast that exists naturally in the flour. You’ll whisk together the flour and water and then set the mixture aside so the natural yeast can develop. It’s as simple as that. Ready for the next step? See How to Feed Your Sourdough Starter.
