Also filet your breasts, lightly pound then proceed lite flour then egg wash, olive lightly brown then go with the rest, and yes capers..

There is an ingredient missing in all the piccata recipes, Italian ham proshuitte or an Italian cured ham. This adds depth to the recipe and a little salt. but it's in piccata . My spelling is off because of Wi-Fi but this is true also an egg wash is usually used..
