The yeast worked very well but did make the waffles taste a bit "funky" according to my three boys, ages 11, eight and eight. To combat this, we doubled the amount of vanilla. We sifted Cake Flour (in place of all-purpose) into the mix. Try sifting powdered sugar into both the egg white mixture, as well as the egg yolk, butter, milk, flour mixture to sweeten things up a bit. We eyeballed the powdered sugar...but approximately 1/4 cup to the flour mix and a couple of tablespoons into the egg whites.
