Roasting the pumpkin is better than boiling it. Cut the top off as if you are making a jackolantern. Then let it cool and break apart the pumpkin. Scoop out seeds with a spoon and peel off skin. The size of the pumpkin determines the amount of time needed in the oven; the larger the pumpkin, the more oven time needed. After scooping and scraping, purée' the pumpkin in a food processor and strain the liquid thru cheesecloth. Use as desired. Roasting takes a little more work, but roasting it gives it a richer flavor.

I make a very similar recipe, it is my grandmothers recipe and is the favourite pie in the house... it is pale yellow because it is fresh pumpkin and she is right fresh pumpkin makes all the difference, can pumpkin I assume has added colour and more spice.
