CARROT PECAN WILD RICE 1 1/2 cups rice 4 1/2 cups wate 2 carrots 1/4 cup raisins 1/4 cup chopped pecans 1/2 orange salt & pepper 1/4 cup chopped parsley 4 tablespoons melted butter Boil 1.5 cups rice in 4.5 cups water Simmer 40 minutes (or according to package directions) Slice 2 carrots into 1/2” rounds Simmer carrots 5 to 7 minutes until tender Combine rice with carrots in a large bowl Add: 1/4 cup raisins 1/4 cup chopped pecans zest and juice from 1/2 orange Season with salt & pepper Add: 1/4 cup chopped parsley 4 tablespoons melted butter Stir and serve

WILD RICE -CARROT, RAISIN, ORANGE, PECAN What I got from the video and made it. Delicious and Easy. Ingredients 1 cup wild rice 2 carrots (medium) ½ cup raisins ½ cup pecans cut in food processor or smash them in a plastic bag 1/2 cup orange juice 1 tbsp orange peel Sea Salt & pepper Fresh Basil - Albahaca - ½ cup Italian marinade ( home made is better) Directions Cook the rice with just a bit of olive oil Cut and boil the carrots til tender, but firm. ( you can use frozen ) Mix all the ingredients. Add the marinade. Let stand for at least 20 minutes. Serve.( I would add fresh spinach or marinade artichokes, fresh green beans, etc)
