I made the Chef John's Sunshine cheesecake and did it exactly and it was perfect and the tip to let it stay and cool in oven to keep from cracking was excellent..BUT it was bland, almost tasteless..heavy which is fine but I didn't like it at all..However, it was wonderfully creamy but I like mine to be tangy like the cheesecake I used to get in NEW YORK. Philly recipe is still the best..but they use 5 bricks of cream cheese. Sorry, it looked perfect but was tasteless.. I liked the video tho and the spring form worked great too.

I also wonder as Kayla asked in her comment if yogurt could be substituted successfully? I have been wanting to make a REAL New York Cheesecake from scratch for quite a while now, I guess it always intimidated me, now that I FINALLY purchased a springform pan, and found this easy recipe, I will certainly make it. My granddaughter, and I simply love cheesecake! I will be making it for her birthday as she prefers that instead of cake :)

Chef John: Can you substitute plain yogurt, for sour cream, successfully? I don't want to try it, and waste all that cream cheese, just to have it fail. ha ha.
