When I was a child (long ago), my Mother used to buy minute steaks for the kids and "real" steaks for the parents. Back then, minute steaks were sold as such - they looked like they'd been pounded with the other end of the mallet and they were very tough. Obviously, they weren't cooked properly (sorry, Mom). Am going to try these your way - Thanks Chef John - love your videos and recipes.
