For the fava bean salad....any of them really. Chef John said to place the beans in a Ziploc bag and extract all the air (without squishing the beans). Easy way to do that is to insert a straw into the bag, angle the straw towards the empty side and suck out the air. Take your lips off the straw to breathe. (you would think eh....) Suck out as much air as you can to collapse the bag. Put in fridge. Anybody have a new word for yummy?

Correct me if I'm wrong, but Romano Beans have an inedible red mottled skin. Only the renand white beans inside are edible. The ones in the photo are green and are called 'flat' beans, which I grow, and the skin of which is edible and delicious, as is your recipe.
