Beef Medallions with Caramelized Pan Sauce

Plays: 24579

Watch Chef John make beef tenderloin medallions with a caramelized mushroom and tomato pan sauce. Sure, it looks elegant and tastes amazing, but it’s actually quick and easy to make. Though not technically Italian, this dish is definitely inspired by traditional Italian flavors. You’ll deglaze the pan with Marsala wine and a little stock, and finish your sauce off with a little butter. This is a spectacular combination of flavors, and you can have this prepared in just 20 minutes! Get the recipe for Chef John’s Beef Medallions with Caramelized Pan Sauce.

It is a sad fact that many chefs/cooks erroneously believe the myth that alcohol is burnt off when used in cooking. True, but only about 25% does so. Studies done at various universities confirm this fact. Therefore, use wines/spirits sparingly. thanx all. nuf 'sed. plamuk aka travellingchef.

Beef Medallions with Caramelized Pan Sauce~ LOVE LOVE LOVE this recipe!Very easy! I will say, I didn't have tomatoe sauce, but I did have a can of crushed tomatoes w/basil,onion and garlic. I pressed the juices out of about a 1/4 c.. Plus added more juice, because I wanted to actually see how much juice was going in. The butter just gives it the "O'H MY GOSH" flavor that you are looking for in a recipe! So, glad I found this, think I may try it tomorrow, with some chicken tenderloins! Thanks!
