Made this just now....it is half gone already..( my daughter is allergic to dairy) so i did use vege margarine instead of butter, reduced the sugar and used almond milk with 2 tbsp apple cider vinegar {as suggested by twins&dog :)}. It was so easy to do and tastes great. thank you so much. I have been asked to make this for tomorrow for school lunch for my daughter :)

For buttermilk made at home - you can use 1 cup of milk ( I always use skim) and add 1 TBSP of vinager and microwave for 30 seconds. Stir quickly, it may not look good but it makes my banana bread the best anyone's ever tasted and will work well here too. Good luck and now you can make it with regular pantry item you have on hand.
