Smoked Pork Shank with White Beans
In this video, you’ll see a simple technique for cooking Italian cotechino pork sausage with braised white beans and Swiss chard. First, you’ll braise the sausage whole with the bean dish so the sausage can flavor the beans. Then, you'll slice the sausage into coins and fry them up in olive oil until crispy. Frying the rounds really draws out extra flavor and adds wonderful texture to the sausage.
