I definitely ascribe to less is more on my pizza. A simple pepperoni and/or plain pizza works for me. At the risk of being too judgmental, I don't understand pizza with the entire vegetable crisper contents and various meats on a smorgasbord pizza. I have never tried making my own pizza, but, this is simple enough that I Wil.

I worked making pizza 40 yrs ago and used to be able to toss dough. I have been experimenting with making low carb pizza and my techniques are very similar to yours except I pre-cook the crust, either in a pizza pan on the stove or in the oven, because low-carb flour is hard to get really thin without breaking it. When my oven bake control broke, I began making them on hi, then low broil with good results. Also, I have tolerated extra toppings. Thanks for the suggestion to keep it simple. Any advice on low carb pizza appreciated.
