Nov 14, 2012 7:57 PMI love making sweet potato casseroles. They are delicious. I sometimes roast the sweet potatoes first, cool them, then peel them. That gives them a caramel taste. The walnut toppings are great on top, it gives the casserole a crunchy texture.
